Upside Down Cake for my lil bro’s girlfriend

My younger brother is currently looking for jobs overseas so he is kinda unemployed at the moment. He requested that I bake something for his girlfriend’s birthday. I decided to try my own version of Pineapple Upside Down Cake.

I used 175g All Purpose flour, 175g butter, 175g caster sugar, 1 and half Tsp baking powder, 1 tsp vanilla, a pinch of salt, 3 eggs, pineapple slice and tidbits, raisins to replace cherries, 1/4 cup brown sugar. I made 2 round pans of cake.

My siblings loved the taste. It’s not too spongy, not too sweet, and the pineapple glaze are just as good as the cake. I’m trying mango cake next time . Cheers!

Getting fit or fat?

I am trying to get fit again after giving birth to my son Maverick. It’s hard juggling household chores while taking care of a 6-month old big baby boy. Before I am able to finish one task, he’s up and crying for playtime. His playtime revolves around trying to get up, practice rolling in bed, pushing his ass off trying to move forward, vocalization (screaming in frustration), and baby talk ( all drools and sweat). He scream and fake a cry,a begging move so all eyes and ears will focus on him. Yes, my son is an attention- seeker big baby. If he is awake and I’m busy doing something, he’ll scream and cry. And because of these, I rarely have time for myself. But hey, I’m not complaining. I am in heaven everytime I see his gorgeous smile. I fall madly in love in his laughter with all the drools in it. And no matter how many times I get hurt by my partner’s snide comment about me being big and all fat, I won’t trade my big boy for a skinny and whistlebait figure. Hell, yeah. Never! Maybe I’ll think about trading my partner but never this sweet bundle of joy that gave me my big love handles and fat figure. And that’s tempting!
